8 oz finely grated carrots
8 oz almond flour
2oz toasted sliced almonds
2 oz all purpose flour
5 oz coconut sugar, 2 Tbsp powdered sugar
2 tsp baking powder + 1 tsp cinnamon
2 tsp of melted coconut oil
How to Prepare Carrot Almond Cake
Spray coconut oil in a cake pan. Line the bottom with parchment paper, spray coconut oil on it, and sprinkle sugar. Put the cake pan in the fridge.
Finely grate the carrots. Put them in a bowl with 1 tsp. of sugar and mix.
Preheat the oven to 360 F.
Beat eggs with a mixer the leftover of sugar until the mix doubled in volume, whiten, and began to foam.
Mix the almond flour, the grated carrots and the juice and cinnamon until blended.
Add the flour and baking powder and add them to the previous mix
Pour batter into the cake pan and bake to 40 min
While the cake is still warm, sprinkle powder sugar on the top and if you like, add some toasted sliced almonds.
